Irish Cask Collection

An exclusive collection of Ireland's finest bonded whiskeys.

Our Philosophy:
Rarity Through Patience

The Liquid Ledger is proud to partner with the Irish Cask Collection, a premier company reviving Ireland's rich tradition of whiskey bonding. This practice involves sourcing new-make spirit and aging it for a minimum of five years, ensuring every cask develops a genuinely mature and complex character that stands apart from the majority of the market.

This partnership provides a full-service ownership experience with complete transparency. Unlike many distilleries, the Irish Cask Collection allows the distillery origin to be displayed on labels, enhancing authenticity and market value. Owners also benefit from an unrestricted exit strategy, offering true liquidity and flexibility without limitations on when or to whom they can sell. Each tokenized cask represents a share in this unique heritage, secured in a professionally managed, bonded warehouse.

Brian Watts: A Master's Legacy

Brian Watts served as Master Distiller of the Great Northern Distillery until his sudden and untimely passing in October 2022 at age 60. A Scottish-born distiller, Brian began his whiskey career with William Grant & Sons in 1992 before bringing his expertise to Ireland in 2017. For the Irish Cask Collection, holding casks distilled under Brian Watts' guidance represents something truly special. These are among the earliest spirits produced at the Great Northern Distillery, liquid history from a facility that has quickly established itself as a cornerstone of Ireland's whiskey revival. With Brian's passing, these casks become even more significant: the work of a master distiller whose knowledge, skill, and kindness left an indelible mark on modern Irish whiskey. Each cask carries not just the promise of exceptional whiskey, but the legacy of a man who helped shape Irelands distilling renaissance.
